My favourite meal is lasagne. My Nan and mum make amazing ones.
Tonight I made slightly modified versions after I saw a recipe online. Trying to make it as gluten free, limited dairy/lactose and without any additives.
I made a ricotta and spinach mix, used turkey mince and fresh Gluten Free pasta sheets.
The turkey mince had zucchini, carrot, mushrooms mixed into it before adding tomato paste and water. Simple cooked in the frypan, cooking the mushrooms first then adding the grated zucchini and carrot. Once the meat was browned I added no salt tomato paste and some water.
I used a loaf tin and 5 Cupcake papers for the tins. The first layer was pasta, then the ricotta and spinach mix, a layer of mince with a sprinkle of cheese. Repeat for the loaf tin. The final layer is the pasta sheet with a light sprinkle of cheese.
All of this is cooked in an oven until the cheese melts and starts to bubble other turn brown.
Deliciousness. A perfect snack size for work plus a great size for dinner. Also the turkey mince is a great change.
Lasagne. Definitely still a fave.
